Artichoke Risotto

In this video recipe, you will learn how to cook artichoke risotto,which is full of flavour and super healthy, vegan and gluten-free‼️

Ingredients (for 2 to 4)

– 6/8 Artichokes- One Onion – One Green Pepper – One garlic clove – One Chopped Tomato – 250gr Rice – 250ml white wine – 250ml vegetable stock (optional) – 500ml water – One Bay Leaf – Salt – Black Pepper – Olive oil

Preparation:

Chop the vegetables and fry them for around 10 minutes and then add the vegetable stock, the white wine and the water. Boil for around 5 minutes and then add the rice. Boil the rice for around 15 minutes (medium-low heat) and stir the rice regularly. If you feel that the rice is getting stuck or is too dry, add a little bit of water. After 15 minutes boiling, turn off the heat and cover for 5 minutes.
